Dirty Martini courgette (Zucchini) salad


4 large courgettes
Splash of Groundnut oil
Zest 1 lemon
1 Small tin lemon stuffed olives sliced
1 Shot Vodka
1 Shot vermouth
1 shot of olive brine
Salt & pepper to taste
2 sage leaves chopped or 1 sprig of thyme



Serves 2 as a salad/starter or 4 as a side.

1 Thinly slice the courgettes length ways 
or use a mandolin.

2  Heat the oil in a griddle pan till very hot

3 Add the courgette and fry for 2 minutes undisturbed.
Then flip for another 2 minutes.

4 Now splash in all the liquid ingredients and herbs, 
sizzle till almost dry 

5 Add the lemon zest and olives with the heat down for 1 minute.

Perfect with fish or chicken or just as is for a starter
